Ingredients:
1 cup leftover quinoa
1 can of tuna (in water drained)
1 avocado, diced
1/4 cup cherry tomatoes, halved
2 tbls avocado oil
2 tsps lemon juice
2 tsps Red wine vinegar
Salt and pepper to taste
2 tsps dill
Salt and pepper
Garnish parsley or cilantro
Directions:
In a bowl add quinoa, flake the tuna, avocado, and tomatoes.
Combine avocado oil, lemon juice, red wine vinegar, salt, and pepper, then drizzle over the bowl.
