Fish and Long Bean Stir-Fry Healthy Asian-Inspired Stir-Fry

Ingredients

Scale:
  • Marinade:
  • 1 tsp vegetable oil
  • 1 tsp cornstarch
  • 1/8 tsp white pepper
  • 1 pound halibut or cod thinly sliced
  • 1/2 pound Chinese long beans, cut into 1-inch pieces
  • 2 tsp vegetable oil
  • 1/2 yellow onion, thinly sliced
  • 2 tsp minced ginger
  • 2 carrots sliced.
  • 2 tsp cornstarch dissolved in 1 tbls water
  • Sauce:
  • 1/3 cup chicken broth
  • 2 tbls oyster-flavored sauce
  • 1 tbls Chinese rice wine or dry sherry
  • 1 tsp sugar
  • Garnish:
  • Toasted slivered almonds
  • Parsley

Directions

    To make the marinade, combine all marinade ingredients in a bowl and mix well. Add the fish and stir to coat evenly. Set aside.

    To make the sauce, combine all sauce ingredients in a small bowl and mix well. Set aside. Blanch the beans until. Place a stir-fry pan over high heat until hot. Add the oil, swirling to coat the sides. Add the onion and ginger and cook, stirring, until fragrant, about 30 seconds. Add the fish and stir-fry until it turns opaque, about 1 1/2 minutes. Add the beans, carrots, and the sauce and bring to a boil.

    In a small bowl add 1 tbls water, and cornstarch, stir until dissolved then add to the pan.

    Cook, stirring, until the sauce boils and thickens, about 20 seconds.
