  • 4 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 c grated Parmesan cheese
  • 1/4 c chopped fresh basil
  • 1/4 c pine nuts, toasted
  • 1/2 c cherry tomatoes, halved

Directions

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss the sweet potato cubes with the oil, Italian seasoning, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Spread the sweet potatoes in a single layer on a baking sheet. Roast for 30-35 minutes, or until the sweet potatoes are tender and golden brown, tossing halfway through.
