This is an easy summer salad with fresh jicama and tomato. Great pairing with a lighter protein. You can find the jicama cut into sticks at Trader Joes.

Ingredients

  • 1 teaspoon olive oil
  • 1 garlic clove minced
  • 3 tablespoons fresh lime juice 

  • 1 teaspoon cumin 

  • 3 tablespoons extra-virgin olive oil 

  • 1 (15 ounce) can black beans, rinsed and drained 

  • 1 small jicama, peeled and diced 

  • 2 plum tomatoes, chopped 

  • 3 tablespoons red onions chopped

  • 1⁄4 cup cilantro, chopped 

  • salt and pepper

Directions

  1. Add the lime juice and cumin to a large bowl and slowly whisk in oil.
  2. In a small skillet add the olive oil and the garlic and sauté for 1-2 minutes.
  3. Add beans, jicama, tomatoes, onion, and cilantro, sauté 3-4 minutes then add it to the bowl with the vinaigrette
  4. Season with salt and pepper and serve!
