Jicama, Tomato, and Black Bean Salad
This is an easy summer salad with fresh jicama and tomato. Great pairing with a lighter protein. You can find the jicama cut into sticks at Trader Joes.

Ingredients
Scale:
- 1 teaspoon olive oil
- 1 garlic clove minced
- 3 tablespoons fresh lime juice
- 1 teaspoon cumin
- 3 tablespoons extra-virgin olive oil
- 1 (15 ounce) can black beans, rinsed and drained
- 1 small jicama, peeled and diced
- 2 plum tomatoes, chopped
- 3 tablespoons red onions chopped
- 1⁄4 cup cilantro, chopped
- salt and pepper
Directions

Add the lime juice and cumin to a large bowl and slowly whisk in oil.

In a small skillet add the olive oil and the garlic and sauté for 1-2 minutes.

Add beans, jicama, tomatoes, onion, and cilantro, sauté 3-4 minutes then add it to the bowl with the vinaigrette

Season with salt and pepper and serve!
