Ingredients

  • 1 pound carrots, peeled
  • 2 tablespoons finely snipped chives
  • 2 tablespoons finely chopped fresh parsley
  • 1-15oz can chickpeas, rinsed and drained, Dressing
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon ground cumin

Directions

  1. Using a julienne peeler, cut the carrots into julienne pieces.
  2. Place the carrots in a medium serving bowl.
  3. Add the chives, parsley, and chickpeas to the bowl.
  4. Make the dressing by whisking all of the ingredients together in a small bowl until completely blended.
  5. Add dressing, salt, and pepper to the carrot mixture and mix.
