Cucumber salad

This simple recipe was part of an Asian series I did for a client. It has lots a flavor and is the perfect side in any Asian meal or as a meal-prep side.

Cucumber salad

Ingredients

Scale:
  • 6 Persian cucumbers, sliced
  • 1/2 teaspoon sea salt
  • 3 Tbsp rice wine vinegar
  • 1 Tbsp sesame oil
  • 1.5 Tbsp tamari or soy sauce
  • 1 Tbsp natural honey
  • 1/4 cup of green chives, chopped
  • 1/4 tsp red pepper flakes
  • 1/2 Tbsp sesame seeds

Directions

    Slice cucumbers very thinly.

    Sprinkle them with sea salt and toss.

  3. 3

    Let cucumbers sit with the salt for 15 mins so they release the excess moisture.

    Soak the excess moisture out with paper towel.

  5. 5

    Add vinegar, sesame oil, soy or tamari, honey, red pepper flakes, sesame seeds and chives to cucumbers.

    Chill and serve.
