Tilapia Stew with Nopal (Cactus)

This Stew has a lot of nice flavor and serves as a great “comfort food” without the extra calories. It’s great for those cooler evenings.

The cactus is a great healthy option because it is high in protein and fiber, good for bone density and a great source of antioxidants all while being low carbs. Any flaky fish would be great in this stew but I prefer tilapia because it’s a milder fish that won’t take over the dish.

Ingredients:

3-4 6oz pieces of Tilapia

2 tbls olive oil

1 small onion diced

4-5 Garlic cloves chopped

1 cup cactus diced

1/2 cup green olives chopped

1/4 cup capers chopped

1 15oz can quality Tomatoes diced

4 cups vegetable stock

2 tbls Mexican oregano

2 bay leaves

1 tbls Salt

1/4 cup Cilantro chopped


Directions:

In a large stock pot add the olive oil. When hot at the onion and garlic and sauté for about two minutes. 

Add the cactus continue to sauté 4 to 5 minutes until softened. 

Add the capers and green olives, sauté 2 to 3 minutes. 

Aad the tomatoes and vegetable stock bring to a boil.

Add the Mexican oregano, bay leaves, cilantro, and salt. 


Submerge the fish into the stew and simmer for about 15 to 20 minutes until the fish is cooked through. 


To plate:

In a bowl add the stew then lay the fish right on top. 

Garnish with parsley.
