Spinach bean frittata cups

This is a great meal-prep recipe. Filled with a lot of protein, fiber, and complex carbs you can eat these as a healthy breakfast to start your day or maybe an 1-2 hours before a good workout to give you enough energy to get you through it.

This recipe makes about 50 cups and freeze great so you can plan ahead.

Ingredients:

20 oz spinach chopped 

Garlic chopped

4 Green onions chopped

2 15oz cans Black beans

1 15oz can Kidney beans 

12oz Feta 

2-3 Serrano chopped (optional)

1 Tbls Nutmeg

18 Eggs 

1/2 cup Canola oil 

1 cup Self rising flour

Salt


Directions:

Preheat oven to 350 degrees. 

Combine spinach, garlic, green onion, feta, all beans, Serrano, nutmeg, and salt. 

In a medium bowl combine eggs and canola then add to dry ingredients. Mix well then add the flour. Mix add salt to taste. 


Grease or spray muffin Tins. Pour the egg mixture into each muffin cup about 3/4 full. 

Bake for about 30-40 min.
