Korean Barbecue 

This is a fun way to spend an evening with friends or just your significant other. Most of the work here is in the prep. From slicing and mixing to marinading.

Of course, I use a Korean bbq grill pan (can be found on Amazon) but you can do the same on a flat top grill, an outside grill, or a cast iron pan. This is really about getting the meat sliced nice and thin, the marinades, and the sauces. As with most things in cooking this is an opportunity to be creative and use any types of protein and vegetables you want. 

Ssamjang sauce is a popular Korean dipping sauce. Here I make my own but you can also get It from Amazon. The gochujang (a red chili paste) and soy bean paste can also be found on Amazon. 

The sauces can be as simple as Sesame oil and salt and pepper, or a little more involved like the couple I have here.


You can also add rice to your wraps. Traditionally it would be sticky rice or even Jasmin but if you’re trying to be healthy use brown, black or cauliflower (fresh blended into a rice consistency) or simply leave it out.

Ingredients:

Marinades:


1/4c brown sugar

Pinch white pepper

4 tsp sesame oil

4 tbls mirin

3 tbs honey

1 Korean pear pureed (or any pear will do)

1/2c soy sauce

6 garlic cloves chopped

6 green onion thin sliced


Marinade:

2 green onion thin sliced

Juice of 1 lemon

2 tbls gochujang

2 tbls honey

2 tbls soy sauce

1 tbl rice vinegar

1 tsp sesame oil


Dipping sauces:

Ssamjang sauce:

1/4c gochujang

2 tbls honey

1.5 tbls sesame oil

1 tbls sesame seed

1/2 donjong or soybean paste

2 green onion thin slice 

3 garlic cloves chopped


Sesame garlic sauce:

3 garlic cloves grated

1 tbl Chili garlic sauce 

1 tbl salt

1/4c sesame oil


Protein:

Beef 

Chicken

Pork shoulder very thinly sliced. It’ll be easier to cut if the meat has been in the refrigerator for a bit.

tofu sliced thinly lengthwise 

Fish… Scallops, prawns, salmon (skin on to keep it together but it will easily flake off when it’s grilled).


Directions:


Marinades:

Mix all the ingredients together then place your protein in the marinade and set aside in the refrigerator for at least 2 hours.


Dipping sauces: 

Mix all the ingredients together and set in the refrigerator until ready. 


Vegetables:

Any vegetables that will go on the grill (eggplant, bok choy, peppers, zucchini, etc.)should be sliced. 

Any vegetables that will be used as garnish (green onion, cucumber, tomato, etc.) should be sliced. 

Typically you can use seaweed wraps or Boston lettuce to use as a wrap as you assemble. 


This is where the fun starts…

Get the grill nice and hot and place whatever ingredients you want on the grill. It’ll all cook  very quickly (including the protein if it’s cut thinly). Just mix and match and enjoy your company and your dinner.
