Ingredients:
1 cup almond butter (or peanut butter)
1/4 cup coconut flour (or gluten-free flour)
1/2 cup (8 tbsp) JustBetterFiber
1 tbsp matcha powder
1 tbsp moringa powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup honey or maple syrup (or to taste)
1 large egg
1 tsp vanilla extract
1/4 cup water
1/4 cup dark chocolate chips (optional, for a chocolatey twist)
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a small bowl, whisk the JustBetterFiber with the water until fully dissolved and slightly thickened. Set aside.
In a large bowl, mix together the almond butter, coconut flour, matcha powder, moringa powder, baking soda, and salt until well combined.
Add the dissolved JustBetterFiber mixture, egg, honey or maple syrup, and vanilla extract to the dry ingredients. Stir until the dough comes together. If you like, fold in the chocolate chips.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Gently press each cookie down with the back of a spoon or your fingers to flatten slightly.
Bake for 8-10 minutes, or until the edges are golden and the cookies have set.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
