Chickpea, chocolate chip cookies

Trying to stay on a healthy food journey sometimes gets hard especially around holidays and celebrations. 

This cookie recipe is fast and easy. Using chickpeas reduces the amount of flour and gives it more fiber, protein and complex carbs. Adding the fiber helps control the sugar and of course I use my favorite natural substitute allulous. Lots of good flavor here and at the bottom of the recipe I give an alternative way to blend the ingredients so instead of a nice smooth cookie you can have a more oats rustic feel and texture. Same ingredients just different mixing method.

Ingredients:

1-15 oz can of chickpeas rinsed and drained

1/2 cup creamy almond butter

1/4 cup rolled oats

1/4 cup allulous sugar or your preferred substitute 

1 tbls Justbetter fiber website: https://getjustbetter.com

1/4 cup natural honey

1/4 cup water

1/2 cup chocolate chips 

1 tsp vanilla

1/2 tsp baking powder

1/2 tsp baking soda 


garnish:

Top with Mini chocolate chips 



Directions:


Preheat oven to 350

Line a baking sheet with parchment paper.


Blend all ingredients in a food processor except chocolate chips and water. 

Blend just enough so the ingredients are mixed, then add the water.  

Blend until smooth scraping down the sides as necessary.


Pour the badder into a large bowl then add the chocolate chips and combine with a spoon. 


Add 1-2 tbsp of cookie dough onto the baking sheet (depending on desired size). 


Use a spoon because it's sticky to touch.  Add extra chocolate chips on top. 


Bake for 13-15minutes depending on your oven. They will come out of the oven soft but will firm as they cool. 


Alternatively for a more arty and rustic look and feel skip the blender and mash the chickpeas with a fork or potato masher then simply hand mix all ingredients 



TIP: After each cookie dip the spoon into a small bowl of water to help the badder slide off the spoon better.
