Baked Peaches

This is a great dessert with good fiber and accompanying it with the yogurt adds protein. I use allulose as the sweetener it's a natural sweetener and has minimal calories and carbs. I also added Just Better fiber to add more fiber. You can find them at justbetterfiber.com. Tell them Chef Henry sent you.

Ingredients:

1⁄4 cup unsalted butter, softened

1 tablespoon Allulose (sweetener)

1 teaspoon ground cinnamon

1⁄2 teaspoon vanilla extract/paste

1 Tablesppon Just Better fiber

4 small fresh peaches, halved and pitted

1/2 cup non-fat greek yogurt for serving

Directions:

Preheat oven to 375°F. Stir butter, Allulos, cinnamon, Just Better fiber, and vanilla together in a small bowl until combined. Spread the mixture evenly in the bottom of a 9-by-13-inch baking dish.

Arrange peaches cut-side down on top of the butter mixture. Bake until tender, 20 to 25 minutes, basting the tops of the peaches with the melted butter mixture halfway through. Divide the peaches, cut-side up, among 4 small plates. Serve with yogurt.
